Bulgur Buckwheat Pancakes
These are fabulous!!! They are perfect with a teaspoon of peanut butter and a drizzle of real maple syrup. The kids have been asking for these every morning. I’ve made them with vanilla soy milk and regular 1% milk with a dash of vanilla. Both were great.
Ingredients:
3/4 C Hodgson Mill buckwheat pancake mix
3/4 C leftover Hodgson Mill Bulger Wheat with Soy Hot Cereal (cooked)
1 Omega 3 egg
1 C Vanilla Soy Milk (or 1 C 1% milk with 1 tsp vanilla)
1tsp cinnamon
2 oz. chopped walnuts
1T oil
1T applesauce
Preparation:
Mix all ingredients in a large bowl and let rest for 5 min. Spay a large skillet with cooking spray. Cook on medium heat, using about 1/4 cup of batter for each pancake. Cook until bubbly in the middle and dry-looking around the edges. Flip and brown the other side.
