Chicken Salad
I like to throw whatever I have in this salad, but these are some of my favorite ingredients. It makes a lot, so you can have lunch for a few days!
Ingredients:
Leftover roasted chicken (about 1.5 C, chopped)
1 C grapes, cut in 1/2
3 stalks celery, chopped
1/8 C raisins
1/8 C dried cranberries
1/4 C almonds, chopped
2T walnuts, chopped
2T pecans, chopped
1/2 Vidalia onion, chopped
1tsp lemon juice
1/2 tsp ground black pepper
1/2 tsp salt
2T mayo
2T fat free sour cream
Steps:
Mix all ingredients
Serve:
Serve inside tomato, cucumber or � whole grain pita with lettuce.
