Open faced Basil Chicken/Turkey Sausage Sandwich
I made this on a whim, and ended up getting my pizza fix! It was wonderful, and got a picky husband’s thumbs up!
Serves 6
Ingredients:
1T Extra Virgin Olive Oil
1 onion, cut into 8 wedges
1 small package mushrooms, sliced
1 package Basil chicken/turkey sausage from Trader Joes, sliced into about 6 bites each.
1 can crushed or chopped tomatoes with juice
1 C prepared spaghetti sauce
6 slices whole grain sandwich bread
14 oz. part skim mozzarella cheese
Preparation
- Saute onion in EVOO for about 5 min over medium heat. Add in mushrooms and sausage. Saute for about 5 more minutes;
- Add in spaghetti sauce and tomatoes. Cook over low heat 10 min;
- Put slices of lightly toasted bread on a cookie sheet and scoop sausage mixture over each slice. Top each with 2 oz. mozzarella, and broil until cheese is melted.
Serve:
If you are re-heating, Don?t toast the bread. Instead, put the bread onto a cookie sheet with mixture and mozzarella. Turn oven onto 450 and stick in oven for 15 min. It will start to warm as your oven does, and should be done 15 min. later. Keep checking it after oven is at full heat.
