Stumped on Salads

I have a hard time creating new salads. I love ordering salads because I don’t have to think about what ingredients go together and what dressing to use. I never remember what ingredients go in them by the time I get home, though, and my biggest challenge are dressings. My lunch today was fairly easy to come up with. I used my leftover tuna steak, shredded it and put it on lettuce. My dressing was a mock tartar sauce. Do you have any easy favorite salads to share? I’d love to try them. Please post your recipe below.

Breakfast:
Hard boiled egg
2 C coffee w/ vanilla soy milk and splenda
Snack:
1 banana
1 oz. almonds
Lunch:
Tuna Salad: 2 oz. leftover tuna steak, shredded, 2 celery stalks, 1 tomato, 2 C lettuce
Dressing: 2 scallion greens, 1 T pickle relish, 1 tsp. real canola mayonnaise, 1T FF sour cream, 1T lemon juice, Salt & pepperSnack:
1 spicy V8
Fruit & Yogurt parfait: 1/2 C FF vanilla yogurt, 1 tsp cinnamon, 1 C strawberries & raspberries, 1 oz. chopped walnuts
Dinner:1/2 C mushroom cous cous
2 oz. leftover Sicilian Chicken
Snack:
1 C baby carrots
1/2 C Hummus
2 glasses cabernet
